Blueberries, available year-round, and packed with antioxidants, lend a gorgeous color and a hint of tanginess that complements the mint and lime perfectly! A splash of coconut milk adds a luxurious creaminess. With a burst of fruity sweetness and a touch of the tropics, this cocktail is perfect for summer sips!
This Creamy Blueberry Mojito comes together in just 10 minutes! Begin by blending fresh blueberries until smooth, adding a splash of water if needed. Strain the puree through a fine-mesh sieve to remove any solids.
Next, combine sugar and lime zest on a small plate. Moisten the rim of a glass with citrus or honey and dip it into the sugar mixture.
In a cocktail shaker, gently muddle the mint leaves with simple syrup to release their oils. Add the rum, blueberry puree, lime juice, coconut milk, and ice. Shake vigorously until chilled.
Fill the rimmed glass with ice, strain the cocktail mixture into the glass, top with sparkling water, give a gentle stir, and garnish with fresh mint leaves, blueberries, and edible flowers for a finishing touch!
Can I make blueberry puree in advance?
Yes! Making the puree ahead of time is a great way to streamline cocktail prep. Store it in an airtight container in the refrigerator for up to 3 days.
