This Strawberry Rhubarb Cocktail is made with gin, strawberries, rhubarb and lemon for a perfectly refreshing summer cocktail!

Ingredients

gin

oz
strawberry rhubarb syrup
1
oz
fresh lemon juice
Club soda
Garnish: Rhubarb ribbon and mint
Strawberry Rhubarb Syrup
1/2
cup
strawberries
1/2
cup
chopped rhubarb
1/2
cup
sugar
1/2
cup
water
Instructions
Add gin, strawberry rhubarb syrup, lemon juice and ice to a cocktail shaker and shake until chilled.
Strain into 2 cocktail glasses over fresh ice. Top with a splash of club soda and garnish with a rhubarb ribbon and mint sprig.
Strawberry Rhubarb Syrup
Add all ingredients to a small saucepan over medium heat and bring to a boil, stirring occasionally.
Reduce heat to low and simmer for 20 minutes. Remove from heat and cool. Strain into a jar.
Notes
This recipe would work great as a mocktail! Just eliminate the gin and add a little extra club soda.
Make extra syrup and try it with ice cream or add it to sparkling water.
