To a cocktail shaker - Add gin, coconut milk beverage, lime juice, simple syrup and ice. Shake vigorously for 15 seconds until combined and well chilled.
Add the strawberry to the cocktail glass and gently muddle until broken down. Fill the glass with ice. Strain the cocktail mixture into the glass.
Garnish with a strawberry santa hat and mint sprig.
For the Santa Hat Garnish
Slice the leaves off each strawberry to make a flat base.
Slice a thin strip of the large marshmallow.
Place the strawberry on the sticky side of the marshmallow and skewer onto your toothpick until just the tip of the toothpick comes through. Place a mini marshmallow on the tip of the toothpick.
Notes
Some separation can occur over time so I recommend serving with a straw.
I like a gin with more delicate flavor like Hendrick's (versus very juniper forward) for this particular cocktail.
Use 1–1½ oz strawberry puree in place of muddling for faster prep or batching.
Mocktail version: Omit the gin and replace with coconut water or non-alcoholic gin alternative.
