Tear rosemary sprig and add to a cocktail shaker with lemon juice and honey. Muddle until the honey is dissolved. Add pear juice and ice and shake until chilled.
Strain into a cocktail glass over ice. Top with sparkling water. If desired, garnish with a pear slice and rosemary.
Notes
Use chilled pear juice and sparkling water.
Pear juice can vary in sweetness, taste your mocktail and adjust flavor to your liking before straining.
