Lemongrass Simple Syrup
1stalk lemongrass, bruised and diced (about 1/2 cup)
1/2cupsugar
1/2cupboiling water
Cocktail
1 1/2ozEmpress 1908 Indigo Gin
3/4ozlemongrass syrup
1ozcucumber juice
1/2ozlime juice
1/2cupsparkling water
Garnish: cucumber, edible flowers, basil

Lemongrass Simple Syrup
Prepare lemongrass stalk: Trim the bottom 1/2 inch. Use a mallet or muddler to bruise the lemongrass and release natural oils. Use a sharp knife to dice the lemongrass.
Add diced lemongrass, sugar and boiling water to a heat proof cup. Stir until sugar is dissolved. Allow the mixture to chill and infuse for at least 10 minutes on the counter or up to 3 days in the refrigerator.
Strain the mixture into a jar, discarding solids.
Cocktail
Add lemongrass syrup, cucumber juice and lime juice to a cocktail glass. Stir to combine. Add ice and sparkling water.
Slowly pour Empress 1908 Indigo Gin into the glass so it layers. If desired, garnish with cucumber, edible flowers and basil. Stir before enjoying.
