Ingredients

Lemongrass Simple Syrup

  • 1 stalk lemongrass, bruised and diced (about 1/2 cup)
  • 1/2 cup sugar
  • 1/2 cup boiling water

Cocktail

  • 1 1/2 oz Empress 1908 Indigo Gin
  • 3/4 oz lemongrass syrup
  • 1 oz cucumber juice
  • 1/2 oz lime juice
  • 1/2 cup sparkling water
  • Garnish: cucumber, edible flowers, basil

Instructions

Lemongrass Simple Syrup

  • Prepare lemongrass stalk: Trim the bottom 1/2 inch. Use a mallet or muddler to bruise the lemongrass and release natural oils. Use a sharp knife to dice the lemongrass.
  • Add diced lemongrass, sugar and boiling water to a heat proof cup. Stir until sugar is dissolved. Allow the mixture to chill and infuse for at least 10 minutes on the counter or up to 3 days in the refrigerator.
  • Strain the mixture into a jar, discarding solids.

Cocktail

  • Add lemongrass syrup, cucumber juice and lime juice to a cocktail glass. Stir to combine. Add ice and sparkling water.
  • Slowly pour Empress 1908 Indigo Gin into the glass so it layers. If desired, garnish with cucumber, edible flowers and basil. Stir before enjoying.
