Cute as a Cucumber (Empress Gin Cucumber Cocktail)
Looking for a cocktail that’s as stunning as it is refreshing? The Cute as a Cucumber cocktail is a gorgeous and easy-to-make gin cucumber cocktail! Made with Empress Indigo Gin, cucumber, thai basil, coconut milk and lime. This beautiful blue gin cocktail is sure to “Empress” any guest 😜.

- 1 1/2 oz Empress Indigo Gin
- 8-10 thai basil leaves
- ¼ cup diced cucumber
- ½ oz simple syrup
- 1 oz coconut water
- 1 oz coconut milk from carton
- Lime on side for serving (1/2 oz lime juice)
- Edible flowers for garnish
Instructions
- To a cocktail shaker - add thai basil, cucumber and simple syrup. Muddle until juice is released from cucumber. Add coconut water and ice and shake until chilled.
- Fill a cocktail glass with ice. Add coconut milk. Strain cocktail mixture into the glass. Serve with lime. Stir in about ½ oz of lime juice before enjoying. If desired, garnish with cucumber and edible flowers.
Notes
- Color may vary depending on bottle, if you want your cocktail to be more blue, you can add a dash of blue spirulina powder.
- Lime juice on side: lime juice changes the color of the cocktail, so I recommend serving on the side. If you don’t care about cocktail color, you can add ½ oz to the cocktail before shaking.
