Add elderflower liqueur, mint and 1 fig to a wine glass. Gently muddle to release juices and oils but not break apart. Let sit for 2-3 minutes.
Fill the glass with ice. Add pomegranate juice, prosecco, sparkling water and stir. Top with pomegranate arils and garnish with a fig and mint sprig.
Notes
For the best flavor, let the muddled mint infuse together for 2-3 minutes.
To make a batch, multiply the ingredients by the quantity of servings. I recommend pureeing the figs in advance by blending and straining. Add all ingredients to a pitcher immediately before serving.
