Materials

Rhubarb Syrup

  • 2-3 rhubarb stalks
  • 1/2 cup sugar
  • 3/4 cup water
  • 1/2 tsp pure vanilla extract

Rhubarb Empress & Tonic Cocktail

  • 1 1/2 oz Empress 1908 Gin
  • 1/2 oz rhubarb syrup
  • 4 oz tonic
  • Lime wedge
  • Dash pink peppercorn
  • Garnish: Edible flower

Instructions

Rhubarb Syrup

  • Cut rhubarb into 1/2 inch chunks. Combine rhubarb, sugar, water and vanilla extract in a small saucepan over medium heat. Bring to a boil.
  • Reduce heat and simmer for 30 minutes, stirring occasionally. Remove from heat and cool. When cool, strain syrup into a jar and discard solids.

Rhubarb Empress & Tonic

  • Fill a glass with ice. Add rhubarb syrup and tonic water. Slowly pour Empress 1908 Gin into the glass, so it creates a layer over the cocktail.
  • Top with lime juice and a sprinkle of pink peppercorns. If desired, garnish with rhubarb and an edible flower. Stir before enjoying.
