Rhubarb Syrup
- 2-3 rhubarb stalks
- 1/2 cup sugar
- 3/4 cup water
- 1/2 tsp pure vanilla extract
Rhubarb Empress & Tonic Cocktail
- 1 1/2 oz Empress 1908 Gin
- 1/2 oz rhubarb syrup
- 4 oz tonic
- Lime wedge
- Dash pink peppercorn
- Garnish: Edible flower
Rhubarb Syrup
Cut rhubarb into 1/2 inch chunks. Combine rhubarb, sugar, water and vanilla extract in a small saucepan over medium heat. Bring to a boil.
Reduce heat and simmer for 30 minutes, stirring occasionally. Remove from heat and cool. When cool, strain syrup into a jar and discard solids.
Rhubarb Empress & Tonic
Fill a glass with ice. Add rhubarb syrup and tonic water. Slowly pour Empress 1908 Gin into the glass, so it creates a layer over the cocktail.
Top with lime juice and a sprinkle of pink peppercorns. If desired, garnish with rhubarb and an edible flower. Stir before enjoying.
