Add gin, egg white, simple syrup and lemon juice to a cocktail shaker. Dry shake or froth vigorously for 4 - 5 min.
Add 2 pieces of ice to the shaker and shake until melted.
Add cream, vanilla extract, and almond extract and shake for 10 more seconds.
Pour into a collins glass. Slowly pour club soda into the glass until the froth lifts above the rim.
Top with sprinkles.
